Summer Fish

INGREDIENTS NEEDED:

  • Sea Bass Or Other White Fish Fillets (Such As Orange Roughy)
  • Red Onion, Chopped
  • Cloves Minced Garlic
  • Zucchini, Trimmed, Cut Into 1∕2­Inch Pieces
  • Yellow Squash, Trimmed, Cut Into 1∕2­Inch Pieces
  • Oregano
  • Fire Roasted Salsa
  • Cooked Rice

HOW TO MAKE:

  1. Preheat Teflon pan that has been sprayed with olive oil spray in heavy large skillet over medium heat.
  2. Add onion and garlic and sauté until almost tender.
  3. Add zucchini, yellow squash and oregano and sauté until zucchini & yellow squash is beginning to soften.
  4. Add salsa but reserve 1∕2 cup. Bring to boil.
  5. Sprinkle fish with salt and pepper.
  6. Place fish atop vegetables in skillet.
  7. Cover skillet, reduce heat to medium­ low and simmer until fish is just opaque in center; about 5 minutes.
  8. Transfer fish to platter; tent with foil to keep warm.
  9. Increase heat; boil mixture in skillet until liquid thickened to sauce consistency, about 3 minutes.
  10. Season with salt and pepper.
  11. Spoon extra sauce over fish.
  12. Place fish over a bed of steamed rice.
