INGREDIENTS NEEDED:
- Sea Bass Or Other White Fish Fillets (Such As Orange Roughy)
 - Red Onion, Chopped
 - Cloves Minced Garlic
 - Zucchini, Trimmed, Cut Into 1∕2Inch Pieces
 - Yellow Squash, Trimmed, Cut Into 1∕2Inch Pieces
 - Oregano
 - Fire Roasted Salsa
 - Cooked Rice
 
HOW TO MAKE:
- Preheat Teflon pan that has been sprayed with olive oil spray in heavy large skillet over medium heat.
 - Add onion and garlic and sauté until almost tender.
 - Add zucchini, yellow squash and oregano and sauté until zucchini & yellow squash is beginning to soften.
 - Add salsa but reserve 1∕2 cup. Bring to boil.
 - Sprinkle fish with salt and pepper.
 - Place fish atop vegetables in skillet.
 - Cover skillet, reduce heat to medium low and simmer until fish is just opaque in center; about 5 minutes.
 - Transfer fish to platter; tent with foil to keep warm.
 - Increase heat; boil mixture in skillet until liquid thickened to sauce consistency, about 3 minutes.
 - Season with salt and pepper.
 - Spoon extra sauce over fish.
 - Place fish over a bed of steamed rice.
