Protein Chocolate Cake or Muffins


  • Egg Whites
  • Rolled Oats
  • Low/No Sugar Red Raspberry Preserves
  • Vanilla Extract
  • Cocoa Powder
  • Sweetener
  • No Sugar Chocolate Nesquick
  • Baking Powder
  • Baking Powder
  • Butter Buds
  • Kashi Go Lean Cereal (Your choice flavor)
  • Dried Cranberries


  1. Preheat the oven to 350F/176C.
  2. In a blender mix the egg whites, oatmeal, jam, vanilla, cocoa powder, butter buds, baking soda, baking powder, sweetener and Nesquick mix.
  3. Once the batter is ready, fold the Kashi cereal in the batter.
  4. Spray muffin or cake pan with cooking spray and pour mixture in.
  5. Top each muffin or cake with dried cranberries.
  6. Bake for 30 minutes
