Protein Carrot Cake or Muffins

INGREDIENTS NEEDED:

  • Rolled Oats
  • Egg Whites
  • Ground Cinnamon
  • Sweetener
  • Sugar Free Syrup
  • Low/No Sugar Apricot Preserves
  • Raisins
  • Shredded Carrots
  • Instant Sugar Free Vanilla Pudding Mix

HOW TO MAKE:

  1. Blend all ingredients thoroughly in a food processor or blender.
  2. Spray a muffin or cake pan with cooking spray and pour mixture in.
  3. Top with a few raisins.
  4. Bake at 325F/162C for 40­-50 minutes.
  5. Remove from muffin or cake pan within 10­-15 minutes to avoid soggy bottoms.
  6. Keep them refrigerated (they also freeze well).
