INGREDIENTS NEEDED:
- Flounder or Tilapia
 - Egg Whites
 - Corn Meal
 - Flour or Oatmeal
 - Pecans
 - Cajun Seasoning
 - Black Pepper
 - Salt
 
HOW TO MAKE:
- Preheat oven to 400F/204C.
 - Spread foil on a cookie sheet, and spray with cooking spray.
 - Place cornmeal, flour or oatmeal, pecans and seasonings into a food processor and grind mixture until fine.
 - Dip fish into egg whites then dip into corn meal mixture.
 - Place on baking sheet.
 - Cook fish in oven for about 20 minutes or until fish is golden brown and flaky.
 
TARTER SAUCE:
- Fat Free Mayonnaise
 - Dill Pickle Relish
 - Squirt of Lemon Juice
 
HOW TO MAKE:
- Mix together all of your ingredients in a bowl.
 - Alter ingredients for desired taste.
 
SPECIAL SAUCE:
- Fat Free Mayonnaise
 - Ketchup
 - Horseradish
 - Worcestershire Sauce
 - Louisiana Hot Sauce
 
HOW TO MAKE:
- Mix together all of your ingredients in a bowl.
 - Add more seasoning as desired.
