Greek Pasta Salad

INGREDIENTS NEEDED:

  • Cooked Multi-Colored Pasta Spirals
  • Vegetable Broth (Save 1/2 Cup)
  • Balsamic Vinegar
  • White Wine Vinegar
  • Sesame Oil
  • Minced Garlic
  • Dried Basil
  • Dried Oregano
  • Low Fat Or Fat Free Feta Cheese
  • Fresh Spinach (Washed & Chopped)
  • 1 Cucumber (Peeled & Chopped Into Small Pieces)
  • Red Onion Diced
  • Dash Fresh Cracked Black Pepper To Taste
  • Dash Salt
  • Cherry Tomatoes Cut In Halves

HOW TO MAKE:

  1. Place vegetable broth in large sauce pan and bring to a boil.
  2. Add the pasta spirals and cook until the pasta is al dente.
  3. Drain off broth.
  4. In a separate bowl mix the additional 1⁄2 cup of vegetable broth, vinegar, garlic, basil and oregano.
  5. Place the cooked pasta spirals in a large mixing bowl and stir in the seasoned vegetable broth mixture.
  6. Add the feta cheese, spinach, chopped cucumbers and diced red onions. Toss well.
  7. Season, to taste, with the salt and pepper.
  8. Add the tomatoes and toss gently.
  9. Chill until ready to serve.
