INGREDIENTS NEEDED:
- Cooked Multi-Colored Pasta Spirals
- Vegetable Broth (Save 1/2 Cup)
- Balsamic Vinegar
- White Wine Vinegar
- Sesame Oil
- Minced Garlic
- Dried Basil
- Dried Oregano
- Low Fat Or Fat Free Feta Cheese
- Fresh Spinach (Washed & Chopped)
- 1 Cucumber (Peeled & Chopped Into Small Pieces)
- Red Onion Diced
- Dash Fresh Cracked Black Pepper To Taste
- Dash Salt
- Cherry Tomatoes Cut In Halves
HOW TO MAKE:
- Place vegetable broth in large sauce pan and bring to a boil.
- Add the pasta spirals and cook until the pasta is al dente.
- Drain off broth.
- In a separate bowl mix the additional 1⁄2 cup of vegetable broth, vinegar, garlic, basil and oregano.
- Place the cooked pasta spirals in a large mixing bowl and stir in the seasoned vegetable broth mixture.
- Add the feta cheese, spinach, chopped cucumbers and diced red onions. Toss well.
- Season, to taste, with the salt and pepper.
- Add the tomatoes and toss gently.
- Chill until ready to serve.
