Egg Whites with Potatoes & Salsa

INGREDIENTS NEEDED:

  • Egg Whites
  • Potato (or Frozen Potatoes)
  • Chunky Salsa
  • Diced Mushrooms and/or Vegetables

HOW TO MAKE:

  1. Microwave the potato on high for approximately 6 minutes or until cooked.
  2. Spray a pan with cooking spray.
  3. On medium heat, scramble the egg whites with the vegetables.
  4. Place the potato on a plate and mash it down with a fork.
  5. Top the potato with the scrambled egg whites and vegetables.
  6. Top eggs with salsa.
